Chili Mac & Cornbread

In: Daily Meals, Food Products

There’s nothing terribly special about that meal, but that’s one reason I love it so much. I’ve talked before about how doctoring up a little Hamburger Helper can make a simple meal really fancy. Adding fresh mushrooms and onions (sauté them separately, please!), a splash of wine and some fresh asiago to Hamburger Helper Stroganoff [...]

Yes, my dearhearts, this grown-up grilled cheese is exactly as good as it sounds. This recipe was born from the bargain bin. Two packages of brie, nearing their “sell-by” date, less than half price. Sign me up, right?
It was also born from a really bad day, and what better comfort food than macaroni and cheese? [...]

This is no shortcut recipe, but it is really simple. It just involves occasionally babysitting while you go about your day. Also? I just made this recipe up. I call it Country French Turkey because the flavor reminds me of Chicken Tonight’s Country French sauce, but I don’t know how French it is. I just know it’s delicious. It’s beautiful comfort food and a super elegant meal that certainly doesn’t taste like it costs so little per serving!

Spaghetti Squash casserole is one of my signature dishes and definitely one of my favorite to make, especially when cooking for the week, when I spend a full day cooking and spread the leftovers over the course of the week. The flavor of this gets even richer when made the day before!
I love starting with [...]

Country Fried Steak & Mashed Potatoes

In: Daily Meals, Recipes

This actually wasn’t the plan when I picked up some pork cubed steaks from the discount meat bin, but when I started poking around for recipe ideas for cubed steak I felt silly for never considering it! Also, it’s ridiculous how easy this was to make. So easy that I’m sure this will become a [...]

The Best Meat Loaf EVAR.

In: Daily Meals, From Scratch, Recipes

Bravado? Maybe a bit, but it’s true. My meatloaf, even when not in MEATCAKE! form, is the stuff of legend. Back when I made the MEATCAKE! I promised a recipe but failed to deliver. Today I give you my secret (modified from Mark Bittman’s recipe in How To Cook Everything). You’re welcome.

Perhaps my most successful experimentation ever, this meal was born from the need for something very quick and I had a few off ingredients that I needed to get rid of, and I sort of made this up as I went along. One of my favorite meals that my grandfather used to make is smoked [...]

CONFESSION: To say my husband’s a little timid about cooking is an understatement. Still, occasionally he’s willing to tackle dinner, as long as he has VERY SPECIFIC INSTRUCTIONS. This is the email I sent him to make this delicious beef stew. You really can’t go wrong with this recipe, just season to taste (I season [...]

This meal had a couple different inspirations. A few years ago my husband and I went to Cleveland for a long weekend and ate at a wonderful little restaurant whose name I can no longer recall. I’ll never forget my lunch, though; they served a macaroni and cheese with pulled BBQ pork that was just [...]

Ham & Veggie “Pot Pie”

In: Daily Meals, Recipes

Tonight’s dinner had me pretty concerned. Remember that ham I talked about? Well, it was time to use it up, so I decided to improvise. I was skeptical about my choices until my first bite, but it turned out really delicious! All the tasty goodness of pot pie and surprisingly quick to make.
INGREDIENTS:

4 cups [...]

Lazy Lasagna

In: Confessions, Daily Meals, Recipes

CONFESSION: I make the best lasagna. It’s true. Whether it’s my vegetarian lasagna or my combo, I do it best. I can’t order lasagna in Italian restaurants because all I can think is “mine’s better.”
The problem is, there’s no recipe for me to share. It’s different every time. But while I don’t have a recipe [...]

About a month ago we got a great deal on a whole ham in the discount meat bin. $7 for a TON of ham. The up side? A lot of really good smoked ham. The downside? That’s a lot of ham, and for us, ham is a sometimes food, which means getting creative. I’ve been [...]

I Confess…

All my cakes come from boxes. My spaghetti sauce isn't from scratch, and I think making my own pasta and bread (unless it comes from a mix…) is rarely worth the effort. I believe individually frozen chicken breasts and ready-made pie crusts are among the best inventions ever. Through these menus, recipes, tips and recommendations, I hope to show that the options for creative cooking are limitless, even when time and money are not.
